Holiday weekends are best spent in your RV. But cooking an elaborate Easter dinner in your RV may same like a difficult feat. These Easter recipes are easy to make in your compact RV kitchen, but they’re guaranteed to make everyone ask for seconds.

Creamy Au Gratin Potatoes

What you need:

  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups milk
  • 4 russet potatoes (sliced)
  • 1 onion (sliced)
  • 3 tablespoons butter
  • salt and pepper to taste

Cooking instructions:

  1. Preheat your RV oven to 400 degrees.
  2. Butter a 1-quart casserole dish.
  3. Place half of the potatoes at the bottom of the casserole dish, then layer the onion slices on top.
  4. Place the remaining potatoes on top and season them with salt and pepper to taste.
  5. Melt butter in a medium-sized saucepan over medium heat.
  6. Stir the flour and salt into the saucepan and whisk for one minute. Stir in the milk and cook until the mixture thickens.
  7. Stir in the cheese until it is fully melted.
  8. Pour the cheese mixture over your potatoes, and cover the casserole dish with tin foil.
  9. Bake for 1.5 hours, and enjoy.

Sweet and Savory Ham

What you need:

  • 2 cups honey
  • 2/3 cup butter
  • 1 ready-to-eat ham (5 pounds)
  • 1/4 cup whole cloves
  • 1/4 cup dark corn syrup

Cooking instructions:

  1. Preheat your RV oven to 325 degrees.
  2. Score the ham and insert the whole cloves into the cuts.
  3. Place the ham in a tin foil lined baking pan.
  4. Use a double boiler to heat the honey, syrup and butter into a glaze.
  5. Brush the glaze onto the ham, then bake the ham for 1 hour and 15 minutes.
  6. Keep the remainder of the glaze warm and baste your ham with it every 15 minutes.
  7. Turn on the broiler to caramelize the glaze for the final 5 minutes of cooking.

No-Mess Breakfast Bread Bowls


This is a fantastic recipe for a number of reasons. It’s easy to make, it doesn’t make a big mess to prepare, it’s customizable (you can add pretty much anything to it), it can be made ahead of time (handy if you need to feed lots of people), and it can be eaten pretty much anywhere, whether at a picnic table or while on a hike deep in the woods. They’re also filling and delicious to boot.

No-Mess Breakfast Bread Bowls


  • 4 bread rolls (soft or crusty)
  • 4 small slices of ham, or 2 big ones cut in half
  • 4 eggs, at room temperature
  • ½ cup shredded mozzarella cheese
  • 1 tbsp fresh parsley, finely chopped (optional)


  1. Preheat oven to 180C/350F.
  2. Cut the tops off the bread rolls.
  3. Scoop out the center and reserve. To be neat, use a small knife to cut a round outline before scooping out the center.
  4. Line the bread bowl with a layer of ham. Try to use one whole piece if you can because then there is less chance of egg seeping through and being soaked up by the bread.
  5. Crack in an egg.
  6. Top each with 2 tbsp of mozzarella cheese and a sprinkle of parsley (optional).
  7. Put the top back on each roll. Wrap with foil and place in oven to bake for ~15 to 25 minutes. Take a peek at 15 minutes to check them. 15 minutes = runny yolks. 20 minutes = firm just cooked yolks. 25 minutes + = very cooked yolks.
  8. Remove from oven, unwrap and serve immediately.

Thanksgiving is a holiday centered around family and food, and everyone likes wowing their guests with delicious recipes. These two mouthwatering Thanksgiving turkey recipes offer juicy and flavorful twists on the usual, boring holiday bird.

Grandma’s Simply Perfect Turkey

What you’ll need:

  • 1 1/2 quarts turkey stock
  • 8 cups stuffing
  • salt and freshly ground pepper
  • 1 18-pound turkey
  • 1/2 cup unsalted butter (softened)

Cooking instructions:

  1. Preheat oven to 350 degrees and place the rack as low as possible.
  2. Place rinsed turkey on the roasting pan with breast side up.
  3. Fill the body loosely with stuffing, then rub the skin with the softened butter.
  4. Season with salt and pepper, then place aluminum foil in a tent shape over the turkey.
  5. Pour 2 cups turkey stock in the roasting pan and place the turkey in the oven.
  6. Baste the turkey every 30 minutes and continue adding stock as needed.
  7. After 2.5 hours, remove the aluminum foil and roast until the interior of the thigh reads 180 degrees.
  8. Let the turkey stand for 20 to 30 minutes before serving.

BBQ Grilled Turkey

What you’ll need:

  • 2 cups butter
  • 1 15-pound turkey
  • 3 sweet onions (wedged)
  • 1/4 cup chicken soup base
  • 5 apples (wedged)
  • 1 bottle dry white wine
  • 2 tablespoons garlic (minced)

Cooking instructions:

  1. Preheat gas grill to low heat.
  2. Rub butter all over the turkey, then do the same with the chicken base.
  3. Cube the remaining butter and mix in a large bowl with the apples, onions and garlic.
  4. Stuff the turkey with the apple mixture and place it in a roasting pan.
  5. Turn the turkey over and pour the wine inside. Return the turkey to a breast-up position.
  6. Place the pan on the grill and cover it loosely with foil. Close the lid.
  7. Roast until the thickest part of the thigh measures 180 degrees. When the temperature is close, remove foil and let brown for several minutes.
  8. Let the turkey rest for 20 minutes before carving.

The recipe will make 6-8 crab cakes, depending on how large you form them before throwing them in the skillet.


  • 1.5 t Old Bay Seasoning
  • 2 T biscuit baking mix
  • 1 T dried parsley
  • 2 T mayo
  • 1 T mustard
  • 1 egg beaten
  • ¼ t Worcestershire sauce
  • 1 lb crab meat
  • 2 qt vegetable oil for frying


1. Mix together the first three ingredients. Stir in the mayo, mustard, egg, and Worcestershire sauce in.

2. Gently mix crab meat in.

3. Form mixture into 6 or 8 balls.

4. Heal 1 inch of vegetable oil into a large skillet at 365 degrees. Place crab cakes in and flatten with a spatula. After 3 minutes, flip the crab cake, or until browned.

5. Drain on paper towels and serve.

Dutch Oven Beef and Summer Vegetables


After a fun day of hiking and swimming, every family wants a tasty meal that will win over even those picky eaters. Your friends over at Capital RV Center have a great recipe for beef that will make everyone come back for more. Below is the listed ingredients you will need for this delicoius Dutch Oven Beef and Summer Vegetables recipe. This is a one-pot meal that doesn’t skimp out on the rich beef flavor.

  • 1- 2 pound boneless beef roast
  • 6 garlic gloves, minced
  • 2 tablespoons chopped rosemary leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 1 pint cherry tomatoes, stems removed
  • 2 ears of corn, cleaned and chopped into thirds
  • 1 onion, cut into 6 large wedges
  • ½ pound green beans, trimmed and sliced in half
  • ¾ pound of golden potatoes
  • 4 tablespoons butter
  • 3 cups of chicken broth

Start the prep work at home before you hit the road. Prepare the beef in a large bowl, combining the rosemary, garlic, olive oil, salt and pepper. Thoroughly coat the beef roast and pack it in a resealable non-leak plastic bag. Chill for two days before travel or freeze. Pack up the vegetables in resalable bags and chill until travel as well.

Once at camp, get a fire going with a good coal base. You want to be able to have enough coals to set your Dutch oven upon to cook. Rack your coals evenly so the Dutch oven can sit upon them. Remove any large pieces of firewood. Make sure to have enough coals to add on top of the lid. Once your Dutch oven is in place, add the butter until melted. Add your beef and cook until browned. This takes about 10 minutes. Turn the beef over and add two cups of chicken broth and cover. Take your additional coals and place them on the lid. You will add more coals around the pot every 30 minutes, for one hour. Remove the lid off and turn meat over adding the remaining cup of broth. Add the vegetables and cook covered for one hour. Add more broth if the meat or pot is drying out. Cook until beef is tender. Once done, season with pepper and salt to taste and enjoy.

Bake Chocolate Chip Banana Bread in Your RV


You don’t have to give up your hobby of baking (or love of sweet treats) when you’re living life on the road. This chocolate chip banana bread with peanut butter icing recipe is the only one you need to make your travels even sweeter.

What you’ll need:

For the banana bread:

  • 1/2 cup butter (softened)
  • 3/4 cup sugar
  • 2 cups all-purpose flour
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 3 medium to large bananas
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cups semi-sweet chocolate chips

For the icing:

  • 3 to 4 tablespoons creamy peanut butter
  • 3/4 cups powdered sugar
  • 2 to 3 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract

Baking instructions:

  1. Preheat your RV oven to 350 degrees. Grease a 9-inch by 5-inch baking pan.
  2. Mash the bananas, vanilla extract, brown sugar and ground cinnamon together in a large bowl.
  3. In a separate large bowl, cream the butter and sugar together until fluffy. Beat in the eggs until fully mixed.
  4. Sift the flour, baking soda and salt into the wet ingredients. Stir until combined.
  5. Pour the mashed banana mixture into the wet mixture and mix until combined.
  6. Stir in the chocolate chips.
  7. Bake the bread for 30 minutes, then lower the temperature to 325 and bake for an additional 15 to 20 minutes. Your cake tester should come out clean with a few crumbs attached. Let cool for 10 minutes.
  8. Create the peanut butter icing by beating the peanut butter, heavy cream, powdered sugar and vanilla extract together in a large bowl. The mixture should be thick but easy to drizzle onto the bread.
  9. Once the bread has cooled, drizzle the peanut butter icing on the bread. Dig in!
